I love spring in vancouver, the blossoms are out and they are turning every walk to work into something beautiful. These springtime sugar cookies are an ode to the trees that line my street.
I baked a half-batch of sugar cookies using this recipe but I have to say that it's nowhere near as tasty as my mom's recipe. They still taste good - its pretty hard to mess up a basic sugar cookie - but I know that they aren't as good as they could have been.
Next I outlined the cookies using royal icing. I don't use a specific recipe for royal icing, I just mix until it becomes the right consistency. For these cookies I whisked two egg whites until they were soft foamy peaks and then whisked in icing sugar until it stiffened and created firmer peaks.
After the piped edges had a chance to dry I added a bit of water to my icing to thin it out so that I could flood the cookies. Sometimes royal icing will get bubbles in it but its an easy fix: just poke each bubble with a toothpick to let the air out or gently swirl a spoon through it.
Cookies flooded and drying! It would have been best to let them dry overnight but I didn't really feel like doing what was best so I only left them for an hour or so.
For decoration ideas I turned to the pictures I took on my cellphone of the trees by my place. Pink blossoms...
..fluffy white blossoms.
.Sugar Blossoms ! This is probably the easiest flower shape to make a large amount of plus they keep for a long time. I already had some white flowers left over from another baking project so I only had to make some pink ones. The tutorial for them is right here
The flowers are attached with a tiny bit of royal icing and the writing is done with a food marker.
So cute!
All packaged up to be given away. Even though I only made a half-batch its still too many cookies for one person alone, even if that person really really likes cookies and spring-themed desserts.
