Its been pretty grey and gloomy outside lately, lots of April showers working hard to bring us May flowers. So what's rain without a little rainbow? A tasty tasty rainbow...
I just got a new pan from William Sonoma that was begging to be a jello mold. Its actually a tiny teacakes pan for making petits fours, but cakes just weren't going to be wiggly and happy looking enough for this endeavor.
Making jello is easy.. as easy as boiling water in an adorable strawberry kettle. I didn't want to make six whole boxes of Jello so I added a 1/2 cup of boiling water to each half package of Jello. I also made a creamy jello by mixing 2 envelopes of gelatin into a 1/2 cup of cold water. Once the gelatin had bloomed I stirred in 1.5 cups of boiling water and one can of condensed milk.
Each mold got filled with either the regular or creamy jello with a couple of centimeters left at the top for a contrasting layer to be poured on.
When the jello was starting to set but was still sticky to the touch I poured on the second layer to be the base of the little molds.
The seven creamy jello bites got bright rainbow bases...
..And the regular jello got a creamy base
They all turned out so cute! To release them from the mold I just dipped the bottom of the pan into a sink of hot water, wiggled each piece to release its sides and then slid them onto a tray. If you try this be careful not to dip the mold for too long in the water, the jello will melt and you'll lose the pretty design!
Yum!! Rainbow Jello that you can eat with your fingers. No matter where you bring it everyone is going to want to try one..
.. even if they definitely are *not* supposed to be having one.

Kara: The jello made with condensed milk is really really tasty. You can add flavors to it too or swirl it with regular Jello

Tess: You should try it, it was really easy. Easier if i hadn't made a second layer, then it would just be pour and set.

Am suitably impressed by the jello (it's jelly here in the UK!), I'd be tempted to get my running shoes on if I scoffed them all and they're pretty enough!
