The best kind of rice krispie squares are the soft, marshmallowy ones. I can't stand those big dry ones that you can get in vending machines that barely have any marshmallows at all.
Plus, these squares have the addition of brown butter which gives them a nutty, almost caramel flavor. Fancy!
I actually was planning on making some gooey caramel popcorn that I had read about recently on a blog. The only problem was I could not remember where I saw the recipe. I checked my google reader, my browser history, a few blog rolls.
Nothing. No popcorn recipe.
At this point I had irrationally decided that no other recipe would be as good as the one that I couldn't find. If I couldn't make that one then I wasn't going to make anything.
About half an hour later I randomly found it again. SUCCESS!
......except that it called for condensed milk which I didn't have on hand. Failure.
While I sat on the couch wondering if I could somehow transform my skim milk into a condensed milk substitute, my boyfriend suggested that I make rice krispie squares instead. I told him that we didn't have enough marshmallows because I need marshmallows to make fondant.
This turned out not be true. I'm not sure how I aquired so many bags of marshmallows, but they fill up the majority of our pantry. They would make enough fondant to cover 20 wedding cakes.
Plus we had an unopened box of rice krispies and a stick of unsalted butter in the fridge. These squares were destined to be made.
The steps are easy: brown the butter in a pot
Add the marshmallows, stir to melt
pour in the cereal with a bit of salt and then spread into a buttered pan.
Mmm the perfect marshmallow to rice krispie ratio.
So good that I forgot that I had wanted to make caramel popcorn in the first place.
Brown Butter Rice Krispie Squares
(from smitten kitchen)
1 stick unsalted butter (1/2 cup)
10 oz bag of marshmallows (I didn't have a 10 ounce bag so i just threw some on my kitchen scale)
6 cups rice krispie cereal
1/4 tsp salt
1. melt butter in a thick bottomed pot. Over medium heat keep heating the butter. It will foam and then after a while start to develop brown specks in it. Keep stirring it until it turns golden and has a nutty smell. Do not leave the stove while it is browning! It goes from brown to burnt fairly quickly
2. Take off the heat and stir in marshmallows until melted
3. Stir in cereal and salt
4. pour mixture into a greased pan and press flat with a greased piece of parchment paper or a greased spoon. Let cool and then cut into squares

Oh Yum! Rice Krispie squares are so satisfying. I yearn for the days when folks would make big sticky batches and give 'em out for Halloween. I'll definitely give these a whirl :)

I think I've been traumatized by too many unsuccessful attempts at making rice krispie squares as I child that I haven't made them in a really long time. Like over twelve years long. Yours look fantastic.

Oh gosh, this totally sounds like a thought process I'd go through! I think those krispies were destiny and now I am thinking that this would be a great Halloween treat and at first I was thinking caramel corn, but since I see that your recipe calls for condensed milk (and I don't have any either), I think I'll do the squares :D

Well, I tried them and they are amazing! We finished the batch so fast, I had to make them a second time lol. I'm never making another rice krispy treat recipe again.

I made these the other night, and they went HARD over night. I was looking forward to them oh so much because they look so tasty!
But, I think I'll stick with the recipe on the Rice Krispie box.
